Man it’s been so long since I’ve had time to make a proper update, I hardly know where to begin.
I woke up with a severe allergy attack at 4:38 this morning , but I’m feeling pretty wonderful by now, considering. Brielle is just reading (eating) a couple of books, Aviana is with her Gigi and Opa, Kevin is out spraying and I am feeling relaxed, refreshed, and contented.
We’re going “camping” with my relatives this weekend. What that means is we are staying at my parent’s house and meeting my cousins at their campground for lunch and a cookout. The weather should be perfect!
Yesterday, my mom was here. I left Brielle with her and Aviana and I went to some sales. I bought Aviana a “new” dollie, but when I gave it to her, she had a total meltdown, throwing it on the floor and screaming at me for way too long. I can’t figure her out most times.
After lunch, my mom took Aviana home with her. Kevin and I watched one of my favorite movies from my teen years (Babycakes in case you’re wondering, and I liked it better when I was 14 than I do now) while Brielle napped and played. Later, Grandma Joyce took Brielle, so I had some time to myself in the afternoon, and Kevin went to pick up the new chicken coop someone gave us. What did I do with my free time?
I cut rhubarb and weeded the patch. I made a yummy rhubarb coffee cake to take to the campout today.
Rhubarb Muffins
(double for a 9×13 coffee cake)
3/4 c Brown Sugar
1/2 c oil
1 egg
1/2 c buttermilk or sour milk
1/2 t salt
1 t vanilla
1 1/2 c flour
1/2 t soda
1/2 c nuts (optional)
1 c rhubarb (cut up in 1/2 in. pieces)
TOPPING
1 T butter
1/2 c suger
1/2 t cinnamon
Mix sugar and oil, add egg, milk and mix thoroughly. Add dry mixture and vanilla. Add rhubarb and nuts last, do not over mix.
Add topping and sprinkle over muffins before baking. Bake at 350ยบ ~18 minutes or until done.
The story behind that recipe: Memorial Day after we watched the jets fly over, we went down to the basement of the church the service had been in for snacks and coffee, sponsored by the County Historical Society. I ate about four of these muffins; I couldn’t stop myself they were too good! So I asked around the helpful Society ladies for the recipe. The lady who made them wasn’t there, but someone took my address, and said they’d give it to a friend who went to church with the muffin lady, and lo and behold, she actually sent me the recipe. I’m not sure if I would make the time to send a recipe to a perfect stranger, but she did!
Anyway, Kevin and I went out on a date last night. I leisurely got ready to go out with my husband and wore his favorite shirt (the one he likes to call my Hoochie Mama shirt…’nuff said). We went up to a small town theater where movies are still only $4 and watched Spiderman 3. I really enjoyed myself. We had ordered a pizza to be ready when the movie got over, picked it up, picked up the baby and came home for dinner.
I just really do need some restorative time! Thank God I have people who can help me get it!
